I love pumpkin year round, but especially around Fall. Lately I have been experimenting with some simple, no oil or any added sugar muffins with pumpkin. They took me a few fails, but this week I finally landed on some that came out amazing. Tag me @hautehealthy if you end up making them!
1C GF Flour
2 very ripe bananas, mashed
3/4 cup plant milk (Elmhurst)
1tsp baking powder
1tsp baking soda
1tbsp pumpkin pie spice
1/4C Pumpkin Puree
1/4 tsp sea salt
Mash bananas in the bowl, add all other ingredients in and stir until combined into a batter-like texture. Pour into muffin tin and bake at 350 for 30 minutes (or until you can pierce the center cleanly). Let cool and enjoy!
