PBNJelly Bars Recipe

Just Seven Ingredients:
1 cup soft Medjool dates,pitted
2 3/4 cups GF rolled oats
1/2 cup creamy peanut butter
3 tablespoons pure maple syrup
1/2 teaspoon sea salt
2 tbsp plantbased mylk (I used cashew)
Jam of choice (I used strawberry)

Blend oats in the food processor until you have a fine oat flour. Add the: dates, peanut butter, maple syrup, salt and pb milk to the oat flour. Pulse until the mixture forms into a sticky dough.

Line a glass dish with parchment, spread the dough into the dish and smooth it out evenly, makes a thick layer. Pop in the freezer to set for about 20 minutes.

Warm the jam up to room temp by letting it sit out while making the dough. Pour the warm jam on top of the dough in the pan, spreading out with the back of a spoon. Return to the freezer to set. Slice into bites or long bars. Store leftovers in the freezer.
