1 Cup toasted coconut (Edward & Sons)
1 Cup pitted medjool dates
1/4 dark chocolate (Enjoy Life mini chips)
1 tbsp coconut oil to melt down the chips (I like TJ’s brand)
In a food processor combine: coconut flakes + dates until it becomes a dough. Take spoonfuls, roll into a ball then flatten on the parchment lined tray. Take a chopstick and make a circle in the center keeping them on the tray. Freeze for 10 minutes or until hardened.
Melt the: chocolate chips + coconut oil. Dip the bottoms of the cookies into the chocolate one by one, then drizzle the remaining chocolate over the tops. Freeze again. Let them sit out for a few minutes before enjoying.
My husband said these are one of the best vegan desserts I have made which is saying a lot, so I hope you love them!
