The first time I ever had falafel I was visiting my brother in Chicago and he was vegan at the time. If only I had known back then what I know now and jumped on the plantbased train, but when you know better you do better so, NOW I love falafel and eat it whenever I can. This is a simple, easy Falafel recipe that is baked instead of fried so it isn’t as calorie dense as some of the options you get out.
INGREDIENTS:
1 Can Chickpeas (rinsed & drained)
4 Cups Spinach
½ cup parsley
2 garlic cloves, minced
1 1/2 tbsp lemon juice
1/4 tsp cumin
¼ tsp salt sea salt and ¼ tsp black pepper
4 tbsp GF oat flour (blended)
STEPS: Food process all ingredients together into a mixture.Add 1tbsp water if mixture is dry and blend again.
Scoop out falafel in spoonfuls onto a parchment-lined baking tray, pat with fingers to flatten tops.Drizzle extra virgin olive oil on top and bake at 350 until browned (25 – 30 minutes)
