Since going plantbased over seven years ago I realized haven’t eaten waffles because they typically have eggs in them, so I was really excited to attempt to make some simple vegan waffles with few ingredients. I bought a mini waffle maker from TJ Maxx and they came out perfect on my first try. You could make them your own with flavors, add in pumpkin pie puree or I may try some blackstrap molasses for a gingerbread flavor.
INGREDIENTS //
1 cup gluten free flour
1 tbsp coconut sugar
.50 tablespoon baking powder
.875 cup plantbased milk (I used soy)
.125 cups applesauce
1/4 cup maple syrup
RECIPE //
In one bowl, mix ingredients together into a batter.
Preheat your waffle iron. Mine doesn’t have a temperature gauge or anything fancy.
Pour batter onto the bottom iron in a 1/4 cup to cover the grooves, then close the top over the batter.
Cook for around 3 – 4 minutes before opening and remove the waffle with the tip of a fork to peel off.
Top with your favorite ingredients. Makes 4 small waffles or two large waffles.
