This BBQ Veggie Burger recipe is easy, nutrient dense and filling, plus it is made from whole plantbased foods. I prepped these on a Sunday and we enjoyed them a few times through the week, they stay well in tupperware in the fridge.
Peel and dice two large sweet potatoes then place on a parchment-lined baking sheet, drizzle with olive oil and season with salt and pepper. Bake for 25 mins at 400 or until lightly browned.
While the sweet potatoes bake, drain and rinse two cans of black beans. Place the beans in a large bowl and mash them until almost fully mashed, leaving some beans intact.
Once the potatoes have cooled, add them to the bowl and combine with the beans into a sticky mixture.
Next add in the rest of your ingredients:
1 cup walnuts, finely chopped
½ diced onion
1 tsp garlic powder, ½ tsp paprika, salt and pepper
2 tbsp oat flour (blended oats into a flour)
1/3 cup vegan bbq sauce
Once everything is combined, scoop out with a large spoon, roll into balls and then flatten them into burger patties on the baking sheet. Bake for 20 minutes on each side for a total of 40 minutes. Makes 10 burger patties*
