If you follow me on IG you know I love to get the Earth Bowl at Just Salad on my lunch break so I had to recreate it because 1. I am obsessed and 2. for those of you who don’t have a Just Salad nearby I thought you would enjoy the combination. This salad is nutritious, filling, protein-packed and I love the mixture of the warm with cold ingredients.
PREP: makes two salads
Prepare 1/2 batch of quinoa per package
Pre bake 1 sweet potato, diced with light olive oil, salt & pepper
Chop handful of raw almonds
Chop one red apple 1/2Â
Create Your Earth Bowl:
- Start with a large handful of kale + arugula (TJs)
- Add one scoop of each premade ingredient
- Add some precooked beets (TJs)
- Top with @FollowYourHeart vegan fetaÂ
Dressing (1 salad, medium coverage):
1 tbsp balsamic vinegar
1/2 tbsp dijon mustard
Dash of evoo
Dash of garlic powder
Whisk together, pour over salad.
Toss everything together with salad tongs.Â
