Happy Monday! These vegan, no oil or sugar-added pancakes are going to blow your mind. My husband said they tasted like “normal” pancakes which means they ranked very high on the list of vegan recipes I have created over the years. I didn’t use oil mainly because I didn’t have any, but if you need it for cooking the pancakes I would recommend using coconut oil or vegan butter would work as well.
1 Cup GF Flour
2 very ripe bananas, smashed with a fork
1 tsp baking powder
2 tsp pumpkin pie spice
1/2 Cup pumpkin puree
1 Cup Elmhurst oat milk
Mix ingredients with a fork into a batter-like consistency. Pour batter (1/4 Cup) onto a heated no stick skillet. I had no oil, so I cooked the pancakes over medium heat until bubbles appeared on the first side (2 – 3 mins) and the bottom was browned, then flipped (1 min).
