When you know better you do better. This is true for food as well. Almost all Girl Scout cookies still have partially hydrogenated oils in them (trans fat) plus sugar and refined flour, so these are a much healthier alternative using just eight ingredients.
DOUGH // Mix until combined.
1 C almond flour
1/3 C oat flour (ground down in the blender)
1/8 C Elmhurst walnut milk
1/4 C creamy peanut butter
1/4 C maple syrup
1/2tsp vanilla extract
Roll into balls and flatten with hands when placing on parchment paper.Bake at 350 for 15 minutes or until lightly golden. Let them cool, then spread peanut butter across top of each cookie. Place in the freezer until PB hardens.
COATING // Melt on stovetop: 1 C vegan choc chips + Spoonful of coconut oil until chips cook down
Dip the frozen cookies into the chocolate mixture with a fork until completely covered, then place back on the parchment paper. Freeze again until chocolate hardens.
