Raw Lemon Bars

Lately I have been feeling more into raw foods so I created these super simple, few ingredient raw bars as a mid day treat to take to work. They are filling, nutritious and no baking is required.

Base:
1 cup walnuts
8 large medjool dates, pitted
1 tsp cinnamon
Food process ingredients until sticky, press “crust” into base of parchment-lined dish and pop into freezer.

Filling:
1/2 cup soaked cashews (soak in boiling hot water for at least an hour)
1/4 cup coconut oil
2 tbsp lemon juice
1/2 tsp vanilla extract
 1/4 cup maple syrup or honey
Food process into a “filling” that is well blended. Pour over the crust and spread with the back of a spoon. Place back in freezer for at least an hour. Cut up into bars. 

*If you are allergic to nuts you could substitute the cashews with tofu, plantbased yogurt or thick coconut milk for the filling. For the base, you can sub the walnuts with toasted coconut chips instead.
