Cheesy Cauliflower Bake

It is officially fall so I have been wanting to make some more warming and comfort foods, but keeping them nutritious, whole food based and simple with few ingredients. This was a huge hit with the hubby and he is very picky with vegan recipes.

Boil two small heads of chopped cauliflower until softened (or 2 frozen bags of cauliflower). Once softened, drain and set aside to cool.

Blend sauce:
1 cup raw cashews (soften with boiling hot water for 30 minutes)
1 cup water
1/2 cup pb milk (I used soy)
1/4 cup GF flour
1 tsp salt + pepper
Sprinkle of nutmeg
1 garlic clove
3 tablespoons nooch
1/4 lemon wedge (juice of)

Add cooked and drained cauliflower to the pan (can use a casserole dish or cast iron skillet). Pour the cheesy sauce on the top and spoon sauce to coat everything. Top with 1/2 cup GF breadcrumbs & a sprinkle of thyme.

Bake at 350 for 30 – 40 minutes until breadcrumbs are browned, put on high broil to brown the top and make it crispy.
