SIMPLE PLANTBASED THANKSGIVING MEAL IDEAS //
Easy Mashed Potatoes: Boil red potatoes until tender, drain. Mash. Add in Kite Hill Chive cream cheese, salt and pepper.

Mushroom Gravy: Heat 1/4C olive oil over medium heat, add one package of mushrooms and season with salt & pepper. Simmer until cooked through. Add 1/4C flour of choice or cornstarch until absorbed. Add 1Cup of vegetable broth, stirring until combined. Add fresh thyme. Simmer for about 20 minutes until thickened.

Mac & Cheese: 1Cup soaked cashews + 1C water + 1tsp lemon juice + 1tsp garlic powder + 1/4 Cup nutritional yeast + 1tsp salt. Blend and combine with pasta of choice.

Green Beans with Sliced Almonds: Sauté green beans with light olive oil, add sliced almonds from Trader Joe’s until browned. Squeeze lemon on top.

Pumpkin Bread Muffins: Buy the Gluten Free Pumpkin Bread & Muffin Baking Mix from Trader Joe’s (here). Replace egg with flax egg and use coconut oil. Put in muffin tins and bake per instructions. SO good, simple and easy.
