Plantbased Grocery Haul List & Meal Inspiration

Happy Tuesday! I know everyone loves to see my full grocery lists with prices and to give inspiration as to what we make from seemingly just vegetables and fruit. We actually make all of our meals for two people for a week, including lunches, snacks and dinner every night.

We don’t really eat breakfast so we both time restrict fast until about 11 or 12. I have my Lean Green Smoothie around 10:30/11am depending when I get hungry. The ingredients for the Lean Green Smoothie focus around 70% greens (spinach) and 30% fruits with water as the base. For the fruits I go with what I have on hand and what works best for me which can be: bananas, apples, pears, berries, mango, etc. I always put chia seeds in my green smoothie as they keep you feeling full longer and are a great source of protein, fiber and omega 3 fatty acids. I tried flaxseed for awhile but it never sat right with me. After my smoothie, if I am hungry before lunch I have fruit until I am full so you’ll notice in this haul we picked up: watermelon, grapes, pears, bananas, blackberries and passionfruit – my favorite topping ever to put on acai or on watermelon. If you haven’t tried it look for it next time at your local farmer’s market.

LUNCH IDEAS //

Beet + avocado salad (slice up beets, avocado and put over mixed greens)
Avocado toast on sourdough with tomato + microgreens
Veggie Wraps + hummus for Mac (he roasts all the veggies the night before)
Acai Bowls with passionfruit

DINNER IDEAS //

Portobella Steaks with chimichurri + grilled asparagus
MWH Vegan Pasta all Vodka Sauce
Chickpea Curry over FullGreen “Rice”
Adobo Mushroom Tacos from my ebook
Salad + Roasted Sweet Potatoes
