This is a super simple, whole food based recipe with just four ingredients that can be made in a blender. The banana, oats and blueberries provide fiber, nutrients and minerals as well as additional health benefits beyond any store-bought pancake mix could provide thanks to the blueberries.
RECIPE:
+ Blend 1.5 Cups of GF oats into a flour
+ Add 1 ripe banana & 1.5 Cups plantbased milk & 1tbsp pumpkin puree. Blend until a batter forms.
+ Add 1/2 Cup of wild blueberries into the mixture.
+ Scoop out batter by 1/4 Cups and pour onto the pan over medium heat, cooking until bubbles appear and then flip to the other side (about 3 minutes on each side). Can use light coconut oil if needed.
+ Add additional blueberries and maple syrup. Enjoy!
