These are the easiest vegan stuffed mushrooms and everyone loves them. I brought them to my family Thanksgiving and they were a big hit, especially with those who are not vegan. You can pre make them, then warm them up in the oven before serving.
Ingredients:
20-25 mushrooms (baby bellas)
¼ onion, chopped
5 cloves garlic, minced
½ tsp salt, oregano, thyme & basil
½ C vegan cream cheese, softened (I like the Miyokos brand)
1 tbsp nutritional yeast
½ C Italian breadcrumbs
Instructions:
Preheat oven to 350
Dust the dirt off the mushrooms, remove their stems and set aside
Place mushrooms stem side up on a parchment lined baking sheet, drizzle oil over and sprinkle them with salt
Chop up your mushroom stems.
Saute the stems, onion, garlic and seasonings in 1 tbsp oil (I used avocado oil)
Remove from heat and add in the cream cheese, nutritional yeast and breadcrumbs
Mix until combined well.
Spoon out the mixture and add into/onto each mushroom.
Bake mushrooms in the oven for 30 minutes. Enjoy!
