Meet my Taco Chickpea Recipe. This one is a game changer. I love any recipe that is super simple, has few ingredients and I can throw together in a flash. I wouldn’t even call this a recipe because it is so simple it is stupid but it is one of my most popular posts on IG so I thought I would dedicate a little post to it.
Literally drain and rinse (organic if possible) chickpeas, heat them up over medium heat, add in taco seasoning and cook until they are browned. From draining until done it only takes under 10 minutes. I have tried them in a wrap and on a salad and both ways are amazing. If you are steering clear of gluten go the salad route or you could do lettuce boats and make “tacos” out of them, adding in corn, avocado…whatever Mexican additions your heart desires.
DRESSINGS // I tried two different salad dressing with this and they both were amazing:
1) Haute & Healthy Creamy Garlic Cashew Dressing (blend 1/4 C raw cashews, 1/4 water, 2 garlic cloves, 1/4 squeezed lemon juice). This isn’t exact, I just kind of play around with it but these are generally the ingredients. Blend until creamy.
2) Trader Joe’s Green Goddess Dressing (lemon juice, garlic, chives & basil)
