Plantbased Grocery Shop with Me // December 8th, 2019.

This week’s plantbased grocery haul is a little more expensive because I bought Peonies, organic coffee and some other random purchases like kombucha and this vegan ranch dressing I wanted to try from TJs. Otherwise, it would have been the same as the other hauls, closer to $100. All of the meals from this haul make leftovers so we were able to make everything stretch and have the meals for lunch and multiple dinners this entire week. So, let’s get into it!

MEAL IDEAS //

Lean Green Smoothie / Acai Bowls / Date Bites (All of these staple recipes are detailed in my Ebook)

Eggless Mushroom & Spinach Quiche with mixed greens (adapted from this recipe) | You can throw in any veggies for this but I only did mushrooms and spinach, I think it can use some herbs next time like rosemary.

3 Bean Chili (adapted from this recipe) | We used kidney beans, black beans and corn for ours topped with cilantro.

Curry Chickpeas over Sweet Potatoes (we use this recipe but top it over sweet potatoes instead of rice)

Veggie Wraps / Veggies over Greens // Roast your favorite veggies with light olive oil and store them in the fridge, warming them up to put into avocado wraps, over salad or rice / noodles.

Tofu Broccoli & Eggplant // Bake tofu with sauce of choice and pair with veggies, rice, etc.
