Grocery Shop With Me // Nov 3, 2019.

This week’s Easy Plantbased grocery haul was $124, a little bit more than last week because I picked up kombucha and frozen veggie gyoza which isn’t always on my list but sometimes you need to LIVE a little right?! We do not buy alcohol on the regular, but sometimes we like having some kombucha to drink to give the effect of a cocktail. I do feel like not buying alcohol saves us a TON of money, so if you are looking for somewhere to save in your grocery budget I would look there for sure.

On Sunday morning I did my regular grocery shopping at the farmer’s market and then to Trader Joe’s, which has proven to be the most cost effective combo for groceries where we live in south florida. Some items at TJ’s just can’t be beat for cost (beans, nuts, olive oil, etc), but I prefer our produce to come from the farmer’s market as it seems to last longer.

Lentil salads (lentils + veggie broth, top over salad or eat alone)

Roasted Cauliflower & Baked Potatoes / French “Fries” dipped in honey mustard dressing (No Oil Honey Mustard Dressing: 1/4C dijon mustard, 1/4C maple syrup, 2 tbsp vegan mayo)

Roasted Veggies over rice (zucchini, peppers, bok choy, we already had rice)

Tofu + Veggies

Chickpea Veggie Curry (chickpeas, coconut cream)

Veggie gyoza + Broccoli (work lunch for Mac)

Minimalist Baker Marinated Tofu over a large greek salad – sooo good!
(parsley, kalamata olives, tomatoes, cucumber, tofu)
– Drain & press tofu, once dry cut up into chunks.
– Boil 2 Cups filtered water with 3tsp sea salt.
– Pour “brine” over the tofu in shallow dish, let sit for 1hr minimum.
– Drain brine out of dish. Pour mixture over the tofu, coat and then let sit in fridge for 3 hrs+.
Mixture: 1/4C fresh lemon juice + 2 cloves garlic minced + 1 tbsp maple syrup + 1/2C parsley chopped + 1/2C basil chopped + 1/2C olive oil + 1tsp salt + pinch of pepper.
I blended my mixture but it over blended so I would recommend using a food processor or mixing in a bowl.

All of the extra fruit you see in the haul is for snacks, oatmeal, smoothies and acai bowls! We also make date bites with the dates as we have peanut butter already in the house and top them with salt – obsessed.
