Grocery Haul + Meal Inspo.

Bringing back the #plantbasednotperfect grocery haul today with a full printable shopping list and meal ideas to help motivate and inspire you. We shopped at two grocery stores and this haul cost us $141.88 total, making two people all of our meals for a week.

MEAL INSPO //

Marinated Tofu Salads (tofu, mixed greens, tomatoes, parsley & basil) // Drain & press tofu, once dry cut up into chunks.
– Boil 2 Cups filtered water with 3tsp sea salt.
– Pour “brine” over the tofu in shallow dish, let sit for 1hr minimum.
– Drain brine out of dish. Pour mixture over the tofu, coat and then let sit in fridge for 3 hrs+.
Mixture: 1/4C fresh lemon juice + 2 cloves garlic minced + 1 tbsp maple syrup + 1/2C parsley chopped + 1/2C basil chopped + 1/2C olive oil + 1tsp salt + pinch of pepper.
I blended my mixture but it over blended so I would recommend using a food processor or mixing in a bowl.

Warming Vegetable Soup (cannellini beans, veg broth, celery, carrots, cabbage, yellow potatoes, kale)

Teriyaki Bipmap Bowls (this was my husband’s work lunch for a few days. He used meat but you could do tofu/tempeh + veggies, asparagus, over rice we already had + teriyaki sauce)

Greek Salad with Ice Bath Fries (mixed greens, tomatoes, olives, yellow potatoes) – Get recipe here for Ice Bath Fries

No Tuna Salad from my Ebook (chickpeas, celery, carrot, put over greens or on a sandwich)

Acai Bowls with passion fruit, from my Ebook (I got Sambazon açaí because it was on sale at WF)

Mushroom Tacos from my Ebook (mushrooms, tortillas, black beans, peppers and onions, avocado)

Tempeh “Bacon” Ranch Salads (tempeh bacon heated up and crumbled over salad with tomatoes + vegan ranch dressing)

Cauliflower Bites over rice (going to make crispy cauliflower with a sauce and put it over rice)

Kale Salads (For my lunches, I have been adding avocado, hemp seeds, beet burgers or tempeh over massaged kale to make it more filling. For dressing I do light olive oil, rice wine vinegar + mash the avocado)
