Welcome to the Plantbased Grocery Haul on a Budget edition. This Sunday we got most of our items at the Farmer’s Market and only a few items from Trader Joe’s that either you can’t find elsewhere, have an unbeatable price, or are frozen, as our farmer’s market doesn’t have a frozen department. This haul was $118 for two people and will make six dinners for us, along with lunches and snacks. I’ll get into all the details below to provide you with insight, inspiration and motivation to create your own plantbased, not perfect simple meals.

DINNER IDEAS //
Marinated Tofu over Greek Salads (x 2) / Recipe here
Roasted Hemp Cauliflower & No Oil “French Fries”
Adobo Mushroom Tacos / recipe in Ebook
Roasted Wild Salmon + Asparagus
Lentil “Ragu” Pasta (Recipe: Cook lentils per package with water or veg broth, heat up marinara and combine the two. Pour over pasta, voila!)

LUNCH IDEAS // I usually choose two lunches to alternate during the week
Rice Paper Wraps (carrots, greens, mango + avocado, peanut sauce)
Roasted Veggies over rice or quinoa
Gyoza & Broccoli to heat up at work
Salads & Smoothies
Acai bowls or oatmeal (already have acai & oats)

We also bought a few impulse buys (and when I say we, I mean Mac lol), like chips, chocolate covered almonds and kombucha which we have been enjoying instead of alcohol. The peanut butter is for Date Bites which we make for dessert some nights.

You’ll notice we dont really have “breakfast” as we both intermittent fast until 11 or so which is when I have my Lean Green Smoothie at work. If I get hungry beforehand I will have fruit.
