Plantbased Grocery Shop with Me for the Holidays

This plantbased grocery haul was planned with a few things in mind: my parents will be staying with us for 3 days and we will be eating out on Christmas day so I don’t need to feed them for every meal. My parents are not very strict eaters – they love eating out and they aren’t plantbased – so I wanted to make sure I had food in the house they would like and to avoid going out for a bunch of meals which I really dislike doing. This haul cost $104 and should feed four of us for a few meals, but you could make this stretch longer if only for two people.

MEAL IDEAS //

Vegan Quiche with tofu, vegan cheese, mushrooms and spinach to serve on Christmas morning and trick my parents. On Christmas day we will be going to the Breakers for brunch mid day so I don’t think we will need much else to eat that day.

Super Easy Vegan Chili to make so I have leftovers for everyone if they want lunch randomly. I made this on Monday night to have for a few days.

Roasted Veggie Wraps – my husband likes to bring these with a wrap for work so they last him a few work lunches and if we have extra veg we throw it in the chili or top a salad.

Salads (topped with salmon for him) + Roasted Potatoes (We already have a bag of yellow potatoes and I was craving No Oil Potatoes with mashed avocado guac.)

Beet Salads (Don’t know why I have been craving beets with avocado over mixed greens, but it is so good if you like beets. I plan on bringing this for work lunch Monday and Tuesday, because YES I have to work a half day on Xmas Eve but then I’m off for a week so it’s worth it.)

Acai Bowls, Lean Green Smoothies, Date Bites (All recipes in my Ebook) My parents do like smoothies so I can always make them smoothies in the morning or afternoon if they are hungry.

Fresh fruit for snacks, smoothie bowls and desserts. Everyone likes fruit so I thought I would pair this with their quiche.
